Well , I haven't had the WSM out in a while (cuz it's been too durn cold) but the weather turned real spring-like these last few days soooooo I thought I would try a loaf pan chicken . Well , the chicken I bought was too big for my loaf pan so I had to improvise and use an old chicken roaster we had in the basement. It was tight but just right ,really.
Dusted it with Rufus Teague rub,threw a cup of applesauce in the bottom of the pan and she was good to go.

Vents half open , we hit 300 degrees pretty quickly. I had a beverage and some tunes on the Bose IPod dock and I settled down to cook. Every once in a while, Ithrew a handful of apple chips in the charcoal pan
(I'm trying to use them up) and they added some nice smoke to the blend.

I want to say the chicken was done in about 2 hrs ....
Now....I have to be honest with you. I am a roast chicken junkie.....I've done it a dozen ways myself and had it 50 ways at restaurants and peoples homes and I always love it.
Having said that , this was exceptional. The legs and thighs were super moist (thank you applesauce)
the skin was crisp(thank you high heat) and really tasty (thank you Rufus Teague)
I would heartily recommend this method to anyone.
