Let’s go Mexico! Dinner basically with a few new salsa treats

Lots of fresh produce right now and I had been going over a lot of salsa recipes.
Full intention on making 4 salsas and a peach, habanero, bourbon bbq sauce with extra bourbon.
Left over portion size frozen pulled pork….some onion and some pineapple……I never get cilantro, MRS hates it so I just give in.
The idea is a pork carnitas style dinner with chips and a salsa buffet…..one of the salsas I think will be a really hot sauce.
First up just finished our regular salsa verde…..left seeds from half the jalapeño in there…..one taste brought moisture to my face.
Making them in importance to me of what I want to try/eat so we will see if we can get them all done or maybe just 3.
It‘s going to get hotter.

Looks terrific except for those red peppers in the second pic, I sweat just thinking about their heat...Not for me.
Love to see your pork carnitas style dinner and bourbon bbq sauce...though..

I tested for garlic, salt and heat without dumping everything in….adding jalapeño seeds to salsas and blenders really kick it up more if you are not used to it.
I was sweating without those little guys in there so I tossed them, and added salt and blended a bit more.
 
Next up is salsa taquera roja.
The name says salsa but this is more of a taco sauce……this is darn tasty…..also hot enough to sweat a tad.
3 de arbol, guajillio chili’s and more common ingredients…..this little guy is killer good.
Next up will be a warm one for you Jeff……got a couple habaneros ready to go.

Finished up the peach habanero bourbon bbq sauce…..2 habanero, lots, maybe 4 or more ounces of bourbon….
Lots of ingredients, tastes great, it’s hot but not as hot as I thought it would be.
Working on the last sauce now, I ran out of produce to make the hot sauce I had planned………everything else is hot enough for our dinner tonight…...how many times a day is too many to wash a blender……???
Oh yeah, made a roasted chicken for some tasty lunches this week too.

Last “salsa” was more of a sauce as well. Strictly a jalapeño salsa….no dairy was used. Olive oil was emulsified to bring out the creamy texture……seeds removed, mild spice and all the jalapeño flavour is there.
All the hard work is done, fry up some shells and some pork for tacos soon.
Diced onion, pineapple all these sauces and salsas…..chips, a fairly easy one coming up but hopefully loaded with all the flavour.
I am now regretting not getting the cilantro.

Dinner turned out great, lots to snack on.
Having that left over pulled pork is a great option, many uses.

Hey thanks for looking guys and girls.
Many dinners in the near future are going to include these items as they do carry a shortened shelf life.
Hopefully some bbq and mexican incoming all week long....3 left over lunches for work with the pork and the beans and corn and salsas.
All this work took away from the E6 pizza I was going to make....hopefully its this weekend or next for the pizza, and I will be happy to post for that too. Excited for the flank steak taco meat leftovers for hot pepper and steak pizza, it IS a wining combination....that marinated steak really shines on a thin quick cooked pizza.
