Leftover PB Quesadilla

I made my first PB back awhile ago. It made so much and it's only the two of us. So we bust everything down into small containers for meals later. This is one of those laters. Toni broke out the quesadilla maker and went to town, I could chow these bad boys like a Fred Flintstone tyrannosaurus burger....keep em' comin'
She started out sauteing some onion and red pepper

We love cheese and don't discriminate...of course any port in a storm. All we had was mozzarella so mozzarella wins
