Lazy Sunday afternoon....let's smoke this

Beef tongue!!!

I seasoned with webers Chicago steak seasoning. I know the seasoning will not penetrate the skin but it's a habit. Used a few chunks of hickory and smoked at 275 for about 6 hours. The last 2 I foiled and once the skin can be peeled easily it's done. I checked the temp and it was 195.

Maribel did a salsa. After getting a nice char on the tomatillos and chiles. She added 1/4 onion, 2 garlic cloves, 1/4 bunch of cilantro and 1 tbs salt.

Done and ready to chop once the skin is peeled off.

If you look closely some pieces had a smoke ring

Not a fancy cook and most of you guys won't give beef tongue a try but it's good stuff.

Looks great Tony! I've had it and it does have a distinctive flavor - and it's good! Plated pic looks fantastic; great job as always.
 
I'll give it a try buddy.Looks a whole like a trisket when it's done. Nice cook and something different too.

Tony, I love that folks like you post these types of cooks, BECAUSE PEOPLE DO EET THIS STUFF!
AND ITS GOOD!!!! and it should be out there.... it's not traditional burgers or steak or bird flappers...
man... you can get that anywhere....
it's cookin' like THIS that wakes me up and pushes me to do wild, cool, not your everyday dinner grill honey-i'm-home-what's-for-dinner-SUPPER.

Looks awesome Tony and Maribel - I am a big fan of the tongue taco, but unfortunately up here in the PNW they are hard to come by. Your prep looks great, I am going to have to try it!

Jim, it might taste like the best porterhouse ever and I still ain't eatin that. Even my wife says its good also but I'll just take y'all's word for it.

That's a great idea but I don't think this forum can handle that kind of cook. Most members never had tongue imagine a cabeza?
