Last nights "use it or lose it" dinner.

I had some issues which made me cancel the weekly dinner with the family so, I had to break down a lovely eight bone loin gave a four bone roast to the kids, cooked 2 chops then did this last night.IMG_1312.jpeg

My plate, I roasted the fennel and potatoes while the roast cooked!
Roast was dusted with “Memphis Dust”.
EVOO, salt and pepper on the fennel.
“Butter infused” olive oil from Fustini’s (look them up!) salt, pepper and chopped fresh rosemary on the baby potatoes.
Quite nice if I do say so myself!

I need to learn more about fennel, I just started cooking with it last fall.....I haven't used it in many ways but I love the taste!
Fennel reminds me of licorice and I can’t deal with it. All folks are different.

So fennel is kind of banned in our house. Or when used, my meal is on a different path without. If not and I’m served it, it goes straight into the circular file and I don’t partake.

I often use the tops in place of celery (meatloaf, salads, etc.) or sliced as thinly as possible in salads with spinach and mandarin orange and red onion, simple oil and vinegar dressing. It’s a really fun ingredient, get a bulb and play with it!
Fennel bulbs are MUCH less “licorice” like in my opinion. Toasted seed can be more fragrant but, I like that, the bulb is more floral. But, no one opinion is always right…unless it’s mine!😉🍸
