Don't know if this is technically bbq or grilling. Last night I set up my performer for indirect heat with a chimney full of natural lump and apple wood chunks. The ribs were seasoned with Webers Kicken Chicken & Roasted Garlic & Herbs. It ended up being a knock out combo. Here's where we're splitting hairs I was doing a hot and fast cook with the spare ribs, but it wasn't directly over the heat source. I had the grill running at about 350-375 degrees for about one hour and forty five minutes. All I can say is that I hit this one out of the ballpark.
