Greek Easter Today. I wish health and happiness all over the world.

Today’s menu:

Pork spit roast scented “Kontosouvli’ and “Kokoretsi” consisting of lamb intestines wrapped around seasoned offal, including sweetbreads, hearts, lungs and kidneys!!!

Organ meats have never been my thing, but this is a beautifully executed cook on your rotisserie, HK! Great color on the finished product, too!

I have eaten offal since I was a little kid (Grandmas braised kidneys were a real treat for me!) I have never done much with them aside from chicken livers.
That looks like a Greek Masterpiece!
I would feel truly privileged to share that! Wonderful piece of work.
Nice glass of Rodytis (sp.?) with Ouzo and souvlaki...Opah!
And now we dance!
 
I love to see foods from other cultures that look delightful. Those pics look super good!

My wife and I were planning a 20th Anniversary trip to Wales and Scotland, where I was not leaving until I had Haggis, but with everything going on we'll most likely be doing it next year. In the meantime, I'll watch your posts for dishes like this.

Really terrific work!

Barret, I find it hard to believe that a city like Portland wouldn't have at least 1 pub serving haggis, at least on Robert Burns' birthday!
