I use this or maybe a 10 gallon metal container wherein I dump my spent coals and ash:

I typically dump the day following a cook and keep the can on a concrete slab for days before I get rid of it. But I'm not an expert, so others should chime-in.

This is the same ash bucket that I use. It serves as a holding container before going to the dumpster. As far as used coals, they stay in the kettle or kamato until next use.

I'm really curious about how people handle their used coals.

Once you know they're stone cold and you've sifted them out of the ashes, you can store used charcoal in a previously used charcoal bag.

What I meant was, what do people store their used coals in between cooks?

After sifting the unburnt coals through a 1/2" hardware cloth mesh panel over a trash bag,
I store them in a 5 gallon bucket I keep in my shed. It's the first to go in on my next cook.
