Jerk Chicken & Rice -OR- how to build a 2-zone fire

1 chimney of charcoal, then added a full stick of apple since I was too lazy to pull out the saw to cut chunks for this. I laid the stick so only part of it was on the coals. I used 6 tsp rum flavoring (not rum) to 1/4 cup walkerswood paste.......the rum flavor didn't come through all that strong.
