I will prefer to do them on my wsm. They were great but missed the smoke flavor. I will definitely do them again just to practice more or if I run out of charcoal.
I *know* they were better than at any restaurant I always burned everything on the cheap gas grill I bought my dad 15 years ago (he moved 13 years ago & I "inherited" it) so I started putting a cookie sheet on the bottom grill and cooking indirect on the top rack -----seriously, that's how I did it before I found this forum lol,,,,,,, low & slow on gas... Anyway, I'll try to duplicate your cook, see how I do (after I run out of charcoal )
