Tony, congratulations on your beautiful new car and the nice dinner. I love to grill tri-tip, but I used to consistently have it get more well done than I wanted. Using my Thermapen, I now keep a close eye on it, taking it off quite earlier than the temp I want. In my experience, it climbs considerably after coming off. Again, great cook.
