Italian wedding soup


 
small side note to anyone inspired to make this.

a few chili flakes into the renderings will elevate the heat profile. and of course, a little minced garlic also adds a nice flavor, into the renderings so the garlic flavor infuses into the fats. fats are flavor carriers for those who like to play with food science.
 
Italian Wedding is well known, or at least i thought it was. basically it a chicken soup with meatballs, pasta and escarole. almost like mexican albondigas, which is the same soup but with cilantro and no pasta. the sausage makes it a little heavy du to the fats. chicken meatballs would be even better, IMO.
Darn, I have 6 Albondigas soup recipes. 5 with beef/and or pork and one with turkey, but bummer, that one calls for a can of green chilies. :(

omit the chilis. Albondigas is a great soup!!! and you can do any meatball you desire.
 
Picked up some meatballs and Spinach yesterday while at WinCo. Italian Wedding Soup is happening here this week. Note, WinCo still has untrimmed Tri Tip for < $5 a LBS. Long as they keep that up, Tri Tip will always be on the menu at my house

If you need a more formal recipe than my blather notes:


The key is small meatballs, as bite size. And using the same pan to sear the meatballs and then mix the mirepoix in to assemble the soup.
