It’s butt day!!

Going to throw a couple of butts on today. Two of my daughters heard and requested one for their family too. Going to load up the WSM with 4 butts. I trimmed off the fat caps and seasoned last night, wrapped and stored them inthe fridge. Just waiting for the smoker to come up to temperature. 3 of the butts are regular, the fourth I’m experimenting on and going to do as Chile verde.

Sounds like a good day to me too.
The chile verde sounds like it has some serious potential. Would make some tasty tacos.
 
This is going be a long haul - started off in a light rain that was supposed to end around 9:00. Now it’s snowing and it’s not supposed to stop until noon. Until then I’m just working and looking forward to the finished product.
 
Butts are wrapped. For the chili verde butt I loosely followed the directions I found online. Hopefully it cooks up as good as it smells

Just set things up, three giant chunks of local cherry buried in most of a bag of K Professional (first run with this, interested to see the results) kettle squared away with a full load for Vortex wings and whatever else strikes our fancy. I’ll post pictures tomorrow. The whole area from fireplace outside to kettle are loaded and ready to produce heat! I still need to lay a fire inside for the wimpy.
I’ll most likely stay outside unless there is precipitation!
