Hello All,

I have been inspired by many of your dishes over the past few months that I wanted to try a few. Derrick posted about making Kofta Kebabs last week so I decided to give the technique a try. Bob's whole grilled mushrooms looked awesome so I decided to do some myself. I did not have any ground lamb so I decided to use a mixture of 2/3 ground beef and 1/3 home made Italian sausage. I used cumin, fresh mint, and oregano to spice the meat. I marinated my mushrooms in home made garlic vinaigrette. Here are a few pics.

This turned out great. The family enjoyed the change of pace and I learned a lot. We will definitely be doing this again. I want to tweak the flavor profile of the meat a bit (and try it with the original lamb). The mushrooms were a big hit too. Thanks for the inspiration everyone!

Been meaning to try that meat on a stick myself, and you nailed it John!

Sorry I didn't get back with you on the mushrooms, I don't like to bump my own posts unless several questions are asked.
Then I'm never sure if the person comes back to see my reply.
Anyhoo, usually I roll them in evoo, not sure it helps since it gets soaked up right away, then season with a rub, or seasoning salt.
When I'm not too lazy I make Ernie's kettle fried mushrooms:

edit to add:
When I make my KFM's I use less eggs, and whip in some mayo.

Terrific work here John. I think you'll like your kofta even better next time when you use ground lamb. I was at a farmers market yesterday where one vendor was selling pasture-raised ground goat. I immediately thought of kofta...then looked inside my wallet and found it empty...hate it when that happens!
