Injection Question

Planning on cooking my first brisket tomorrow. It is a choice grade flat from Costco. I plan on injecting and applying rub. Should i inject, then rub, and let sit in the fridge overnight? Or rub, let sit, and inject prior to cooking?

TIA,

Dave

I have only done 2 Briskets so I'm no expert or have much experience. But I would inject and rub prior to smoking.

Thanks for the response Tony, should I inject now and let it sit overnight - or tomorrow prior to putting it on the cooker? having injected butts before, it seems as though the liquid leaks out overnight in the fridge...

David,

A lot has to do with what is in your injection. If just beef stock with some spices, then ok to do today. If your injection contains acidic components, I would suggest waiting until just before placing on the wsm. Let's see... should be a 1" x 1" pattern with the needle going in at an angle.

I would inject prior to putting on the cooker. While your wsm is coming up to temp prep-inject your brisket.

When doing briskets we always inject/rub and wrap then let it set for at least 8 hrs. Like others said would depend what is in the injection but ours is usually beef stock with some other ingredients.

Thanks guys, I injected last night, oiled and rubbed, wrapped in plastic wrap. On the cooker at 8 am this morning... I'll post pictures this evening!
