I was inspired to try my hand at some Beef Plate Short Ribs for the first time.

I finally decided to try my hand at some Beef Plate Short Ribs and I have to say I am pleased with my first try. I only seasoned with Montreal Steak seasoning and threw them on the 14.5" WSM with a Hickory and Cherry chunk mix. Didn't take any before pics, kept the temps around between 275-300 and cooked them for 2 hrs initially, then foil wrapped for 1.5 hrs, then finished off with another hour unwrapped. Here's the eye candy.

Wow! killer smoke ring!!! and the 14.5" wsm is an awesome little smoker! I have two of them, they work great!!!! nice wood choice there too. Ribs Looks great!!
