I finally decided to try my hand at some Beef Plate Short Ribs and I have to say I am pleased with my first try. I only seasoned with Montreal Steak seasoning and threw them on the 14.5" WSM with a Hickory and Cherry chunk mix. Didn't take any before pics, kept the temps around between 275-300 and cooked them for 2 hrs initially, then foil wrapped for 1.5 hrs, then finished off with another hour unwrapped.
