I just got my Pizza Stone today, it's a "Emile Henry" quite nice, just shy of $50 USD

The plan was to slide the Pizza off the paper tray you normally cook on, but that proved to be difficult, so it went in Tony, paper and all

This is where I made my mistake, I needed more fuel. Using Royal Oak and two chips of Cherry Wood

And they're off and running...

I went through it too Chuck, I won't even put the pie in unless I see at least 600 and even then I am not that impressed, When done your pie looked excellent

Looks great Chuck. Really wanting to do a pizza. Soon. Looks like the Giants will have to win the series this year without home field advantage!!

I cringe at the thought sitting in Oakland watching the Giants woop up on them, but a man has to do what a man has to do. :)

First of all I've never cooked pizza in the kettle and I will not do ever. But I read a lot and I've never heard of 30 min or more. For me your cooking T was really too low you have to change set up.

My next Pizza cook will have twice the fuel, hopefully twice the heat. I have to tell you Enrico, it tasted pretty dang good. It was certainly better than in the oven, and if I could have cooked it longer, thus more completely, it would have been off the chart. I pulled it at 30 mins, because I didn't want to dryout / burn the crust

No doubt it was better than oven cooked! My wife in the past has prepared the oven house made pizza but stopped when the rest of the family went out to our pizzeria for protest!

Just curious - did the paper plate bring on any funky taste? I remember a loooong time ago when I left the cardboard under the frozen pizza and tossed it in the oven. Never made that mistake again lol.

It did not. Pappa Murphy's has the plate thing figured out. I would have liked to have cooked it directly on my brand new stone, but there was no getting the pizza off the plate

Having just done one myself and having an appreciation for how good they are and the satisfaction of doing one at home, I have to say braaavo! That looks really good. Looks like you have a great mix of toppings on there.
