After seeing James' post I could not get those skewers out of my mind so off I went to the store - my lady butcher friend saw me and said "back again? You were here yesterday!" That was for a 9lb pork butt I'll be doing Sunday on the 22.5 WSM- stay tuned

And we are officially "Empty Nesters" having delivered or youngest to college last weekend
. Anyway, I used a combination of Bill's and Tony's recipes but did a change up on the skewers. I alternated the chicken with red bell peppers and pineapple slices. It was a delicious meal, so much so my wife had seconds!
I got to use my new Yanagi knife to slice the chicken thighs. That thing is a DREAM COME TRUE! Perfect slices, each done on a single pull of the blade, with zero pressure.
Thighs prepped - marinated in the fridge for three hours
On the Smokey Joe Silver - basted with the syrupy marinade cooked on the stove
Ready to plate
Finally plated on a bed of lettuce and Jasmine rice. Dotted with Sriracha.
