I caved - had to try Yakitori

After seeing James' post I could not get those skewers out of my mind so off I went to the store - my lady butcher friend saw me and said "back again? You were here yesterday!" That was for a 9lb pork butt I'll be doing Sunday on the 22.5 WSM- stay tuned :).

And we are officially "Empty Nesters" having delivered or youngest to college last weekend :(. Anyway, I used a combination of Bill's and Tony's recipes but did a change up on the skewers. I alternated the chicken with red bell peppers and pineapple slices. It was a delicious meal, so much so my wife had seconds!

I got to use my new Yanagi knife to slice the chicken thighs. That thing is a DREAM COME TRUE! Perfect slices, each done on a single pull of the blade, with zero pressure.

Thighs prepped - marinated in the fridge for three hours

Finally plated on a bed of lettuce and Jasmine rice. Dotted with Sriracha.

Looks strangely familiar, LOL. Well done Jose, basting during the cook is essential to the final product and yours looks superb
 
On the serious side, that is some delicious looking Yakitori. The other day, when three different posts were on there, I showed them all to my wife. She loved it and now it's on my to do list!
