Hey ya'all~ My name is Earl (aka Dutch) and I'm into smoking foods, Dutch oven cooking and making my own sausages. I'm looking to build me a mini-wsm since SWMBO (the wife) and I are finally empty nesters and the Lang 60 is a bit over kill when it comes to doing ribs or a small butt for the two of us.

Planning to build the mini with two grate levels so I can do ribs or butts on the top level and do my almost world famous Wicked Baked Beans on the lower level.

Jim, before I got into barbecue I competed in Dutch oven cookoffs plus Ma Dutch and I also taught Dutch oven classes as well as run DO Competitions.

As for my favorite sausage, that would be my habanero brats.
