Chris' excellent cover series on Prime Rib has inspired me to do my first Prime Rib for Christmas. Thanks Chris!

In that series, he wrote:<BLOCKQUOTE class="ip-ubbcode-quote"><font size="-1">quote:</font><HR>Tie the roast at each bone. This prevents the outer layer of meat from pulling away from the rib eye. <HR></BLOCKQUOTE>I'm confused about what this means -- do I just tie a loop around the whole roast at each bone? I guess I'm asking: How exactly do I tie up my new roast?

Thanks in advance!

With butcher string tie around frist bone, wrap around the roast, at the next bone loop string around it and pull the meat up to the bone, repeat till it's tied to the last bone.

Doug,

I don't do anything fancy in terms of tying. No style points here.

Place the roast bone-side down. Cut a length of butcher's twine, run it around the roast to one side or the other of the first bone, bringing the two ends to the top of the roast. Pull snug and tie with whatever kind of knot you like. Then repeat at each bone.

Regards,
Chris
