I've done the jerky recipe from Weber Smoke. It needed more marinade time to get more flavor. So, I am marinading the sliced beef overnight this time. It goes on early in the AM and hopefully turns out as well as Jim's looks.

I don't have a dehydrator either so I am go WSM all the way. I saw Alton use a window fan and air filters one time -- that dude's crazy! LOL

Mike, I bought them at Kohl's department store, but you can find them on-line right here.
However, I did have to cut them down to size to fit on the 22"WSM. About 2 inches each end was removed.
