How long can I refrigerate chicken after brining

I had guests coming over today for just cancelled due to illness. I have chickens currently sitting in brine, but alas, they are not getting cooked today.

So my question is this, after I pull them from the brine and rinse them, is it safe to hold them in the fridge for a day or two? Or, does the brining process do something to the meat that requires me to cook it soon after being taken out?

I am no food expert but I don't think the brining process does any thing that requires immediate cooking. I imagine you can vacuum seal it and freeze it if you'd like. Others with more food expertise may have different advise.

...but why not go ahead and cook it all and save the cooked meat vs uncooked meat? The cooked meat leftovers can be used as an ingredient in all sorts of dishes. I mean you gotta eat, right? Which means you are firing up the pit anyway. I vote cook it!

a day or two should be fine, but I wouldnt push it further than that. It also depends on how fresh the chicken was before brining. let your nose be the judge.
 
I actually had some brined that we didn't get to for the 4th..and cooked them yest for a few people who loved them. They didn't have an odor at all..other than the slight dusting of rub i put them just for color..But I don't know that I'd be willing to go more than a weekend as the the OP mentioned. Good luck and let us know how they turn out today.
 
Companies brine (read enhanced) their meat all the time and package it for sale. I don't see that being any different from you pulling them out of the brine and packaging them.
