Opened the chest freezer this morning and found 4 slabs of spares, 5 butts and a picnic. Guessing somewhere around 50#, not counting the ribs. About to go into sausage making mode. Miriam's Andouille, my hot Italian and breakfast sausage ae definitely on the list, as well as ground pork, a few pork steaks and maybe some Carnitas. There's also some leg of lamb (2 packages). One will be our traditional Easter supper. Anybody have a recipe for lamb sausage? Would really like to empty this freezer as we get ready to move.
