four pounder soaked in Italian dressing then seasoned with Tuscan Sunset
Set-up the WSM sans the waterpan with just enough Kingsford and pecan wood for smoke.

for fun, i roasted a coupla marinated artichoke hearts

Those were good! I did a few more...
as the bird was nearly done, patty pans were oiled then slid on the bottom rack of the WSM

when those were nearly done, shallots and red poblano pepper slices were added.

Basil pasta was plated along with the Italian shé~cone and the patty-pepper mix.

Everything was quite tasty d:^)
after dinner dishes were cleaned and packed away for another day, we relaxed in front of a nice quiet fire.

Great looking chicken..the only problem is ya got that old Dean Martin song going over and over in my head now!! :)
 
Great chick Jim. Not everyone knows that Italian dressing is a great marinade for grilled meat. My mom used it on flank all the time.
Love the back story/subtext of your posts too. :cool:
