Hey everyone, Chris here. Just wanted to give a quick hello and introduce myself. Been lurking around for a while, and have really come to enjoy all the posts. As for myself, I picked up a WSM 22.5" last summer and started to experiment with smoking. Have done some ribs, pork butt, and turkeys.
The last smoke I did was the night before the Bears vs. Packers game. St. Louis spares came out excellent, the game not so much. Haha.
Now that it's starting to hit flip-flop weather here in Chicago with temps in mid 30's, I'm going to really get the smoker fired up. After looking through the mods section, I'm probably going to make some mods for a temp probe hole (I probably got one of the last models before the factory installed grommet), a new stainless steel door, and I'm also going to add a DigiQII.
Anyway, thanks for listening to me ramble this early in the morning...time changes always mess me up. Haha.
