Those spices in plastic bags are a lot less expensive but must be put in airtight glass containers to stay fresh.

I've asked that question at the Penzeys in Menlo Park. They advise that for their products it's OK to store right in the plastic bags. That's what I do and it seems to work fine for me. YMMV. And I can't speak for anything other than what Penzeys said about their bags.

We were told the same thing from Penzeys in Phoenix and we have some about 9-10 months old that appear to be as fresh as when we got them.
 
There are two supermarkets near me that I can get many spices in bulk. I like spending $0.40 for a few ounces of spice in a bag instead of the $5 for the same amount in a jar.
