I've asked that question at the Penzeys in Menlo Park. They advise that for their products it's OK to store right in the plastic bags. That's what I do and it seems to work fine for me. YMMV. And I can't speak for anything other than what Penzeys said about their bags.Those spices in plastic bags are a lot less expensive but must be put in airtight glass containers to stay fresh.
