Hey everyone! I've had my new 22.5 sitting in the garage taunting me for a free weekend, which will be this one coming up. I feel like my first smoke needs to be the true, low and slow, midnight cook brisket... almost as a rite of passage. :D The high heat brisket looks awesome, and I've been eyeing up that brown sugar salmon, so I have a lot of plans for my WSM. I have so many plans, I'll be buying a Foodsaver this weekend as well!

TVWBB and the forums are fantastic resources and I look forward to sharing and absorbing info with all of you great folks.

Welcome Cory. Ambitious first cook. Just remember to catch the temp on the way up, make small adjustments and wait for things to balance out before making another adjustment.
