Hello from PA, recently "downgraded" in a serious way to the WSM

Hi guys!

Like the title says, I recently left a job in the city where I was running one of these:

To a place out in PA where I've got a little bit of room, and my very first WSM all to myself:

You would think that if you can run one you can run the other but the Southern Pride was a "Set the temp and walk away" sort of stick burner, so I'm in totally new territory with my bullet. Can't wait to learn more from you guys!

Welcome to the forum Bill.
Your WSM could be a "set&forget" if:
1) you remove water pan
2) you remove lower grate
3) you install a foiled pizzastone
4) you install a bbqGuru.

Not sure if it's really a downgrade since you are gaining portability. Something that's seriously lacking on the big Southern Prides and Ole Hickory's.
