I started smoking last year with a vertical Brinkman charcoal smoker and really enjoyed it. The Brinkman was ok but trying to keep temp was a pain in my Boston But and I don't mean the one in the smoker. This past April I picked up a 18.5 WSM. So far I have smoked several racks of ribs and a 10 pound pork shoulder. The WSM is amazing hold temp right through the entire smoke including 14 hrs for the shoulder. There is a lot of good stuff on this site so I am happy to be here.
