Hi Everyone,

My name is John Glovik and I'm live in the Des Moines area. I just bought a WSM 18.5 the other day. I smoked 2 chickens yesterday and then I did a midnight brisket. The brisket was awesome but the chickens weren't as good. I only brined them for an hour so next time I'll try overnight. Anyone got any pointers on smoking chickens?

Welcome to the group John. I do chicken in the 350-375 range. Doesn't take much smoke to overwhelm chicken.
 
Welcome, John! I spent 4 excellent years in Des Moines, at 25th and University.

I prefer dry brining (salting) to wet brining for poultry. You could always give that a try sometime.
