Healthy Lunch Tip

Kim has always been thin as a rail but three years ago I managed to lose 40 pounds and keep it off by following her advice and simply account for what I was eating. I thought some members would be interested on how we plan our lunches. Tonight I got off work late but I knew I had to grill some chicken breasts for lunch for the rest of the week. Here are two breasts marinating in teriyaki.

Hot coals ready for the job.

I let the coals burn down for about 20 minutes so I wouldn't scorch the chicken and then put the breasts on.

Turned them at five minutes.

Then on indirect to finish cooking.

Then this is an example of how you could have them for lunch. We cut them in about half inch pieces and add to salad.

The options are limitless with different vegetables, fruits, nuts and seeds you can use. We even use lean beef instead of chicken or beans.

Usually about a half chicken breast for each salad. Make more greens and and vegis than you think you need. The dressing pictured is my favorite and only 25 calories for 2 tablespoons. It will make you fuller than a cheeseburger and it is so delicious. Hope you liked the post. Let me know if you have any questions. Thanks for looking!

Barb and I do the same type of thing most of the time. It's those other times that's giving me grief.
 
Robert, nicely done! I'm with you on the "accounting" for what you eat. I tracked everything I ate for a couple of weeks, and it was really eye opening to see where the calories come from. Since then, I am better able to manage my intake.....regular exercise doesn't hurt!

Your chicken looks mighty tasty, and that salad is a perfect way to use 'em up!

Excellent Robert, I've got about 20 lbs that needs to go away, we eat pretty healthy I just gotta cut back on the cheap wine and increase the gym time. Congrats on keeping the 40 off, it's hard these days, but good discipline is key
