Hatch Chile Casserole
Well... it was Social Security Wednesday and was feeling flush... so I bought 2 pounds of Hatch New Mexico Mild for $.69/ pound. Life is good sometimes.... feeling lazy...
Roasted, skinned & de-seeded them. Got the rest of the ingredients together for a chile casserole.
Greased a 4 quart Dutch oven with butter & put half of the chiles in - skin side down & covered them with 6 ounces of shredded Monterey jack.
Put the other half of the chiles in skin side up.
Topped with 4 ounces shredded X-sharp cheddar. Whipped 3/4 cup of H&H, 3 eggs & 1/2 teaspoon salt & poured it evenly over everything.
Cooked in the Dutch oven with 17 lit coals of KBB on the lid & 7 on the bottom for 35 minutes. Rotated the lid 90* right & the DO 90* left every 12 minutes.
Let the DO rest for 10 minutes..... & opened it up.
Time to eat!
Damn good, imho! Hatch mild will still light your fire.
