Howdy Folks...found some time to fire up the grill over the holiday...here are the highlights. This is by far my favorite meal of the year.

A couple of days ahead I made a buttermilk cornbread for the stuffing.





Also in the stuffing is Hatch chile chorizo, kale, apple cider, sourdough and the usual culprits of onions, celery and garlic









These never quite make it to the plate. Love em.

whatever stuffing doesn't make it into the bird, we make hard stuffing patties while the bird is resting





Rest my friend - Since we can't baste the bird due to the grate, we make a habanero glaze. The drippings are combined with a roasted wing, neck and giblet stock. Makes for a nice smokey gravy
