18+# brisket for wife‘s sons birthday! Not as good as the last one but, it was still pretty darned good! Mac and cheese, beans, modified recipe from Joan’s coleslaw, still needs work but, pears were excellent. They need to be larger chunks than the “small dice” I used. Should be more chunky, flavor profile was smashing!
I used OBR “Texas SPG rub” I felt it was a touch long on salt for my taste but, was widely exclaimed as wonderful by all and sundry.
I think the brisket felt like I was smoking the state of Indiana!

Mac and cheese was a touch dry but, still good, needed three times the asparagus!
I will admit, it was a fine feast!
