Halibut Taco bowls

Lat night I grilled up some halibut. Then we made bowls. Instead of rice we did the riced cauliflower again. Its become a favorite.

For the halibut I fired up the Q1200. Placed the piece in a foil pan. Covered it with a local made salsa and topped that with grated cheese.
For the cauliflower rice i ran one medium sized cauliflower through the food processor. You can use a box grater for this if you want. I added two tablespoons of our homemade taco seasoning to the cauliflower and cooked it over low heat until it was tender.
For the bowls we had black beans, corn, lettuce, jalapenos, avacado, grated cheese, sour cream, more salsa. Was super tasty.

That's awesome Cast. Did you catch that bad boy. I miss Halibut fishing, the best time for Halibut is the worst time for me
 
Looks amazing as usual Case.....as for that cauliflower did you add oil to the pan or is cooked dry with only the taco spice?
Looks tasty and I would love to give it a try as we move to fresh veggie season.

I didn't. Unfortunately I haven't been able to make it over to the coast during the openers. THe season is really regulated now. Also this year the weather hasn't cooperatedc with the open dates either. So this fillet came from Whole foods.
