Half Boneless Pork Loin Smoke Finished

Just finished a smoke of a 5.12# boneless pork. Cut it in half and cooked two pieces. Wrapped in bacon. Cooked in 2 hours! They are hanging out in a cooler right now. I will post more details later tonight. Average outside temp 13ºF-17ºF.

I agree, almost a shame to cut into them. Did you go low or high temp? I assume high since they only took 2 hours. Looking forward to some sliced pictures.
 
Wow! That looks good.

And what could be better than pig, wrapped in pig!!??

Did you use any kind of sauce/rub on that?

High temperature smoke, goal was 325ºF. Cooked until the pork reached 155ºF, then wrapped in foil/towel and placed in a cooler for 1.5 hours.

Really like the technique and the looks of the finished product. Suggests other possibilities too (stuffing, rolling, etc). I think I would take mine off a little sooner though (lower internal temp). But then might not get the same color/done on the bacon. Might have to raise the temps a bit.

Thanks for the post and recipe/technique. It really looks good and I like the way the bacon "skin" looks when sliced. Bet it tasted as good as it look too!

I'm with Ray on cooking to a lower internal temp. Just an F.Y.I here. May I suggest the next time you do a loin to pull it off at 138-140º internal temp, for a super moist loin. Remember you have to factor in the carry over heat during the rest period. You'll get about a 8-10º (maybe more) rise in internal temp when resting.
