Made these with pork cushion meat. It's a lean cut trimmed off the shoulder butt and packaged separately.
Seasoning in the meat is onion, garlic, turmeric, crushed red pepper, cumin, marjoram, and 1.5% salt.
Processed in batches in the food processor then formed into a log.
Pita dough comes together like pizza dough, easy to bake on the stone in the gasser around 500f.
Fresh tzatziki sauce: Greek yogurt, lemon juice, dill weed, garlic powder, salt, pepper, mint, and minced drained cucumber. And I got my sous chef here.
