Hi All What would be good cuts of lamb & beef to make a Gyro? Going to do it on Trompo/vertical spit.

Hi, traditional Greek gyros would normally be made with chicken or pork Using boneless chicken thighs with interspersed layers of fat for basting would be good.
 
Alton Brown did a good eats show making gyros. He used ground lamb and made a meatloaf type thing he places on a grill rotisserie.
