Gumbo

Best cajun recipe site I've found is Chuck Taggert's Gumbo Pages.
Witty guy, authentic (and a bit lengthy, but if you know how to cook, you know where you can get away with shortcuts) recipes.
Made my Wife Gumbo a few weeks ago, she said it was the best she'd ever had.
The only other she had had before was a box of Zatarains, but I digress.

I would agree I prolly can't call it Gumbo w/o the okra so I'm OK with calling it soup
I'll have to look for Chuck Taggert's Gumbo recipe
Next up.....Jambalaya

His red beans and rice is my go-to.
Also, I stopped using ham hock a long time ago, I always freeze leftover pulled pork just for beans and greens

Nice! I note the SF Giants logo on the unit and pennant hanging in the 'kitchen'.....Go Giants! I'm in So Cal and this time of year feel the need to travel north for some dungeness crab - you might do a dungeness version of this?
