Grilled Chicken Thighs

Just a single shot of the grilled thighs. Gotta love cooking on the Performer.

So the chicken was prepared by being skinned, moistened with Olive oil, seasoned with sea salt. They were then handled 2 ways. About 2/3 were well seasoned with 21 Seasoning Salute from TJ's. (just about my favourite store anywhere) The other 1/3 was hit with a LOT of Penzey's Berbere seasoning. My wife did this part.

They were all cooked over Kingsford Mesquite briquettes. At the end of the cook I glazed the spicy pieces with PC Beer and Chipotle BBQ Sauce.

I love the aromatics of the Berbere but it was really hot !!! Good thing I like this. My wife tried a bite and it brought tears to her eyes !

They were plated with some boiled new potatoes and a chopped salad of an orange bell pepper, mini cucumber, mushrooms, lemon juice, fresh thyme and salt.

I would like to use the Berbere again, maybe on rotisserie chicken or some lamb. It's very aromatic.

Nice looking chicken there. I like the sound of the Penzey's Berbere. I'll have to get some on my next order.
