Grilled Chicken Caprese salad and Chicken Stuffed Ravioli!

Sorry for the lack of posts lately! Busy and just got back home yesterday and was flipping thru the sept addition of Food and Wine on the plane and just had to give it a shot!
We started with a bit of chicken tenderloin soaked in this and S&P for about 5 hours! ( just poured off some of the marinade in a ziplock with the chicken!)

Moved the chicken back and started some pancetta for a Mushroom Ragout

Pancetta off and mushrooms,scallion and tyme up!

Deglazed the pan with some Marsala and added heavy cream and pancetta back in to simmer!

All ready to be plated! Ravioli stuffed with chicken and mozzarella and sauce added, chicken cut up and added to some cherry tomato,marinated mozzarella!

Over all great meal but a little rich ...might be better in separate meals as it was a bit much combined!

Best pasta in Juneau I bet. Did you make your own ravioli?

Nope this was just a store bought ravioli!
