Grilled Chicken Breasts

Marinated a boneless / skinless breast in sour orange for three or so hours then seasoned it when a nice citrus rub

got out the carnita lard...

...and a few sweet potatoes.
peeled and sliced the yams in half.
plopped some lard into a cast iron skillet with the face cut down.
into the oven at 375ºF for an hour.
(sorry, no photos of that experience)
hand-picked green beans were ready and waiting.

while the sweet potatoes were cookin', got the breasts on the 18" avocado three wheeler

the yams tasted like candy... the beans were steamed perfectly crisp... and the chicken...

...was moist, very flavourful and delicious!

I did a spit take when I scrolled to the second pic. After reading the start and seeing the first pic, I was thinking "hey Jim's on a health kick". Not a pork steak or a chuck eye?... No skin on the breast?... Then BOOM a bucket of carnita lard! Hahahahahha!

Still a very healthy dinner. It was just the way I was reading it that made me laugh so hard.
 
Good looking chicken Ta-ta's!! Looks super Jim!! Must be the night for chicken cause I have a similar cook going on now!!
