Hello Ladies and Gents

Been reading this forum and every thread on the wsm sections for the last month or so that made me plump for a 22.5" WSM to sit along side my 2006 Spirit E-210 and 2012 Performer (rotisseries on both)

Its been a revelation to get so much insight, i was cursing when i attempted pulled pork on the performer a year ago and never did it again (although it came out lovely, the temps were a nightmare to control due to my impatience lol). Since then i have been reading everything i can on the art of bbq'ing and my skills have improved to the point where friends are astonished at the relative level of increase in competence compared to themselves.

However since acquiring the WSM 2 weeks ago we have already done about 10 full babybacks and one pork butt (not at the same time) and all have been wonderfully received by my diners!

Keep doing what you do - giving information to us relative newbies.

Based on your cooks you don't seem like a newbie. Nice cooks!!
 
Thanks guys, these are my more recent cooks within the last month or two, up until about 6 months ago i had no thermapen and chicken was done after repeatedly cutting into it to see if it was pink or not and lamb chops cremated long enough to become a door wedge!
 
Sunil welcome to the site. You are doing what we all do, reading and then trying and experimenting. I think it makes it more fun and we all benefit. Keep the pictures coming and tell us how you do what you do.
