Green Hatch Chiles

YES! It's that time again! My local Ralph's was roasting some hot ones last weekend, but I'm going to another store tomorrow to get the extra spicy! The other varieties don't do it for me. They're great with everything..guac, sandwiches, eggs. You name it.

Anecdotally, in NM, most fast food chains like MCD and Taco Bell all have options to get green chile on whatever you order. Good stuff!

Edit to add, thought this was in Just Conservation, otherwise I would not have posted pics on Paul's thread.
Hope you get the photos to work Paul!

I like to roast my own.

yeah man. My uncle owns "Rib's" in Cedar Crest and turned my on the the Chiles a while ago. they go great on anything except ice-cream...okay maybe ice cream

Rich that looks like chile heaven. Great work -- I'm very jealous. If anyone knows where I can buy hatch seeds online please PM me. There's always next year's harvest.

I still have some in the freezer from last year but my stash is dwindling. My source (a friend at work) is from New Mexico and said he might go visit family there again this year during chili season. If he does hell hook my up again.

Thanks Tony! Finally got it. We are getting a huge bag (40 pounds)of roasted ones next weekend. We'll take them home then the peeling and salsa making begins!

I envy all of you that can get a hold of a stack like this. Do you have a good recipe for salsa?

Hey Daniel. My favorite thing to with them is Green chile sauce.

I wonder if it would be worth it for you to buy them peeled, chopped and frozen. I have bought them this way before and they weren't bad. They weren't as good as fresh but essentially that's what I do with once they are done roasting. I package serving sizes and freeze them for the year. Im just not sure how long they would last on the trip over. I also bought a can of whole peeled chiles but haven't opened them yet. I buy all my southwestern cooking ingredients from hotchile.com or Santa Fe school of cooking.

With a few well placed phone calls I can see what they would recommend for shipping to Sweden.
