Green Chile Burgers

The story starts in September when the NM green chiles are roasted and frozen for the year.
Peeling the green chiles is a thankless job

Ingredients: Chopped green chiles, onion, garlic, chicken stock, flour, oregano and cumin

Once the garlic and onions are softened, make a rue with flour and cumin

Then add the stock, green chiles and oregano and let it reduce by a 1/3

I used 1/3 sirloin, 1/3 chuck, 1/3 lamb and grilled on the OTS with Gruyere cheese

Very nice, Chris! Do you put the mixture on the burgers and then some cheese over it?
Thanks. No, the green chile sauce goes on top of the cheese. Like ketchup. Actually, any place you would use ketchup you can use green chile sauce instead. It goes on everything! except ice cream.
