Grease Fire in New WSM 22

I wouldn't worry about the grates. The blue color has absolutely zero impact on the food and all grates get a blueish tinge after they're heated up.. They'll be covered with baked on grease soon enough.
And welcome to the forum!

I use a dedicated straw whisk hand broom to clean out the inside of my cookers and it works fine for the carbon removal.
I don’t paint the inside of my cookers ever.
There is enough grease/soot in there to protect against rust and if not a few squits of EVO does a great job for things like my Blackstone.
By doing this none of my gear gets rusty and we live near salt water.
