Gotta Late Start! (Finished Pics Added)

I meant to be up by 3am to get these 9lb+ butts on, but they didn't hit the smoke until 7am!

So, I'm behind already......rubbed down with Wolfe Rub Original and I'm cooking over regular Kingsford and 4 big hickory chunks. I'm also using my new grate that arrived Friday, the others had seen better days!

I can't remember when the last time I cooked on my WSM's?? But I did a dry burn run through both of them on Friday to clean them up! The inside of both of them looked like a green sponge!! All clean now.

Larry, I had to do a double take at your pics!

I put on two 7 lb butts at 4:30 this morning (central time) on the WSM, and they look just like yours, side by side. And your deck looks just like mine too, (in need of cleaning)

Running with all vents open, and have had a steady temp of 230 so far, knock on moldy wood.

Yeah you're right Bob, I need to clean the deck! I've used bleach in that corner a couple times this year and it keeps coming back.....that corner is right under a tree, so it gets almost no sun, but it keeps most of the rain out of the WSM!!!
 
Clock on the deck is a nice touch. I am always having to run into the house to see the time. Love the Christmas lights on the rail too... I am cooking three butts starting this afternoon for a family reunion picnic tomorrow at noon. Planning it as we type... There will probably be lots of cousins sitting around the WSM tonight and consuming beverage as the full moon passes over our heads!

Just stepped out to take this comparison shot, and noticed a shower had passed through, hope it's done now, we had 2.5 inches of rain yesterday.

Deck-wise, some say to not power wash them, but that's what mine is going to get soon. We have an overhanging River Birch. I love it, except that it produces worm-like flowers, then millions of small seeds, and then drops leaves all summer. Other than that it's a great shade tree

You guys are making me jealous.

I cooked (2) 5 lb butts yeasterday. 1 to eat, and the other for the freezer.

Today chicken lg. Qtrs. for lunch.

Maybe you'l get lucky and yours will finish early, like mine did.

What temp are you cooking at, water in the pan or no ? Just curious.

John, one of these butts is for dinner, the other is for a guy at work who gave me two Redskin Tickets at the 50 yard line in the 200 Section at FedEx, along with a parking pass and a Tailgate Club pass that includes all food, meeting of Redskins, past and present!

Yes, the butts have to finish early, right now my temp is at 258º, I will crank the heat up later in the day, probably once they hit around 160º to speed them through the plateaus.

Sand in this WSM pan, bricks in my other one! This sand is like concrete and will not come out of the pan.....it's been stuck to the pan for 4 years now.
 
Looking great there Larry. Ok Bud, help me out here. If you got the butts on by 7:00AM, why does the clock on the deck read 3:37 ish? Just wonderin' is all.

Nice! Those are the size I usually get from my normal source, but yesterday I was in Food Lion and they had butts for 0.87 per pound, so I bought two that were barely over 6 pounds each. I suspected that the ones in the meat case were what was left after cutting "country style ribs", but I got them to open a case and they were all that small. The 2-butt cryovac weighed less than 13 pounds.

Be sure to post pics of the finished product - your photos are always an inspiration.

Go easy with the pressure washer. It's easy to blast the softer wood out from between the harder grain, which will leave your deck with the texture of an old fishing dock. (Or so I've heard, not that I would know from personal experience or anything...)
 
Well Larry, looks like it be dark before their ready.....

Did one that size Fri. night & it was a 13 hour cook, but then again I sat around 25 to 30 degrees cooler....

They look great tho....!

Just like ridding a bike, doing the same cook (on the WSM) Stoker's been running her since 11 pmish.

ROFLMAO! I'm giving the tickets to my daughter and her boyfriend! I'm not paying $8 for beer at the amount I drink!
 
WHOA!!! That's a monster PP Sammich !!! Looking at that pic reminds me of when you see these fabulous looking burgers in fast food restaurant commercials .. The one you get NEVER looks like that, but MAN, that sammich is a beauty !!
