Wow Jim that is a heck of a tongue there! I bet your gonna do it up right! I know that the one I made turned out very tasty, albeit a bit too soft for my liking.

I'm anxious to see how this turns out. I've never been a fan of tasting something that is tasting me back! (Well, that's not 100% true.) Can't wait to see this cook.
it's not only the tongue that will be cooked Saturday.... the whole head will be smoked along side the tongue.
then everything chopped up, mixed and served.
I haven't had a problem eating "off cuts" ever since I really sat down as thought about what meat is. If I can eat somethings leg, chest, back, or gnaw the meat off the bones that holds it's organs in I can eat the other bits and pieces too. Just a thought.
BTW, the whole head thing sounds awesome. I saw one cooked in the ground on a episode of Bizarre Foods. It was in Texas I believe.
